Set of inspection items required for the hygiene management of "water used" in HACCP compliance.

On June 13, 2018, a law amending part of the Food Sanitation Act and others was promulgated, institutionalizing hygiene management in accordance with HACCP. The "hygiene management based on HACCP" and "hygiene management incorporating the principles of HACCP" conducted by each food business operator include "management of water used" as part of general hygiene management. The use of water that does not meet water quality standards may lead to contamination by foreign substances or food poisoning.
