Food preservative "Polylysine" | Fermented amino acid from natural microorganisms

A natural amino acid polycation polymer that can be used in food preservatives, hygiene materials, and daily necessities. It is a safe material as it is a fermentation product produced by natural microorganisms.

E-Polylysine(hereinafter referred to as Polylysine) is a substance officially known as ε-Poly-L-lysine. It is a homopolymer consisting of 25 to 35 units linked by amide bonds, formed from the amino group at the ε position and the carboxyl group at the α position of the essential amino acid L-lysine. Since 1989, it has over 30 years of manufacturing history and is widely used as a food preservative amino acid. As a product of natural microbial fermentation, it can reduce the use of synthetic food preservatives derived from chemical substances. Polylysine is a cationic polymer with a positive charge. It electrically binds to negatively charged microbial cell membranes, inhibiting microbial growth. Polylysine is listed in the existing additive inventory of the Ministry of Health, Labour and Welfare (No. 397).
