ε-Polylysine (hereinafter referred to as Polylysine) is a substance formally known as ε-Poly-L-lysine. It is a homopolymer consisting of 25 to 35 units linked by amide bonds, formed from the ε-amino group of the essential amino acid L-lysine and the α-carboxyl group. Since 1989, it has over 30 years of manufacturing experience and is widely used as a preservative in food. We present the minimum inhibitory concentration (MIC) of Polylysine in combination with sorbic acid, acetic acid, and glycine at pH 5 to 9. Polylysine exhibits stable antibacterial effects at low concentrations across a wide pH range from weakly acidic to weakly alkaline. Many foods we consume have a pH close to weakly acidic to neutral.
