[Data] Thermal Stability of Polylysine

Natural amino acid 'Polylysine' as an additive in food preservatives, hygiene materials, and daily necessities. Introducing the thermal stability of polylysine.

ε-Polylysine (hereinafter referred to as Polylysine) is a substance officially known as ε-Poly-L-lysine. It is a homopolymer consisting of 25 to 35 units linked by amide bonds, formed from the ε-amino group of the essential amino acid L-lysine and the α-carboxyl group. Since 1989, it has over 30 years of manufacturing history and is widely used as a preservative in food. We will introduce the effects of heat treatment on the antibacterial effect of Polylysine. The antibacterial effect of Polylysine does not change even after heating at 120°C for 2 hours. Since food is often subjected to heating during processing, Polylysine, which has excellent thermal stability, can be suitably used in heat-requiring foods. *For more details, please download the PDF or feel free to contact us.
