ε-Polylysine (hereinafter referred to as Polylysine) is a substance formally known as ε-Poly-L-lysine. It is a homopolymer consisting of 25 to 35 units linked by amide bonds, formed from the ε-amino group and the α-carboxyl group of the essential amino acid L-lysine. Since 1989, it has over 30 years of manufacturing history and is widely used as a food preservative amino acid. Polylysine has excellent antibacterial properties on its own, but when added to food, its effectiveness may not be fully realized due to the influence of food components. Therefore, when used in food, it can be combined with other substances to mitigate the effects of food components or enhance its antibacterial effects.
