ε-Polylysine (hereinafter referred to as Polylysine) is a substance formally known as ε-Poly-L-lysine. It is a homopolymer consisting of 25 to 35 units linked by amide bonds, formed from the ε-amino group of the essential amino acid L-lysine and the α-carboxyl group. Since 1989, it has over 30 years of manufacturing history and is widely used as a food preservative amino acid. Chelating agents are commonly used in food, cosmetics, various cleaning agents, chemicals, and pharmaceuticals as metal ion sequestrants and antioxidants. It is well known that chelating agents such as EDTA and sodium citrate exhibit antibacterial properties and have been used for antibacterial purposes for a long time. We present the minimum inhibitory concentration (MIC) against Escherichia coli and Staphylococcus aureus when using Polylysine in combination with EDTA.
