Staphylococcus aureus exists as a commensal bacterium in humans and can be isolated from healthy individuals. Bacteria that proliferate in food produce toxins (enterotoxins), and consuming these toxins along with the food can cause food poisoning. Enterotoxins are resistant to heat and acid, so even if the bacteria are killed during food processing, the toxins can remain, leading to food poisoning. Therefore, it is important to prevent contamination by Staphylococcus aureus not only in the raw materials but also at each stage of processing.
