Escherichia coli and coliform bacteria testing is extremely important as a hygiene indicator for food. The definition of coliform bacteria is "all aerobic or facultatively anaerobic, gram-negative, non-spore-forming rods that ferment lactose to produce acid and gas," which is characterized by not specifying the species of microorganisms. It serves as information to determine whether food has been handled hygienically, and in some cases, it can provide information for assessing edibility based on the type of food. If food has not been handled hygienically, there is a higher likelihood that bacteria causing food poisoning are present, increasing the risk of foodborne illness.
