The definition of coliform bacteria is "all aerobic or facultatively anaerobic, gram-negative, non-spore-forming bacilli that ferment lactose to produce acid and gas," and it is characterized by not specifying the species of microorganisms. This can provide information to determine whether food has been handled hygienically, and in some cases, it can serve as information for assessing edibility based on the type of food. If food has not been handled hygienically, there is a higher likelihood that bacteria causing food poisoning are present, increasing the risk of foodborne illness.
