Staphylococcus aureus exists as a commensal bacterium in humans and can be isolated from healthy individuals. Bacteria that proliferate in food produce toxins (enterotoxins), and consuming these toxins along with the food can lead to food poisoning. Enterotoxins are resistant to heat and acid, so even if the bacteria are killed during the food heating process, the toxins can remain, causing food poisoning.
