It is often determined based on indicators such as water activity, oil acidity, and the denaturation of components like proteins. Accelerated Testing; When setting the best before date, conducting tests over a long period can often be impractical, so a method is employed to shorten the storage period by raising the storage temperature and using theoretical calculations (Arrhenius equation = when the temperature increases by 10°C, the reaction time doubles) to conduct accelerated testing.
