Among these, the contents of fructose, glucose, and sucrose are considered very important sugars for quality control. Traditionally, to measure these sugars in fruit juice through laboratory analysis, liquid chromatography is used along with refractive index measurement. When there are multiple analytical methods like this, each analysis requires time and expertise, as well as the need for different analytical instruments. Near Infrared Spectroscopy (NIRS) is an analytical technique that can simultaneously measure glucose, fructose, sucrose, and Brix in fruit juice in under one minute. Furthermore, it does not require chemical reagents, and no sample pretreatment is necessary.
