The analysis of components in fermented beverages such as wine, beer, and sake is entering a new era. In the overseas brewing industry, methods using Fourier Transform Infrared Spectroscopy (FT-IR) for rapid and simultaneous multi-component analysis are becoming widespread, and this trend is also expanding domestically. Various industries in Japan are reducing time-consuming analyses that use hazardous reagents, while rapidly transitioning to analytical methods that are safe, quick, and capable of simultaneous multi-component measurement. This trend is beginning to take hold in the brewing industry as well.
