There are "plate heat exchangers" and "tube heat exchangers" for the purpose of heating and sterilizing milk. Currently, plate heat exchangers are the majority, but recently, tube heat exchangers have been gaining attention for their maintenance and safety aspects. The "tube heat exchanger" allows milk to flow through stainless steel tubes while hot water flows around them for heating and sterilization. After that, cold water is circulated to cool it down. For delicate foods like milk, this indirect heating method of sterilization helps prevent the loss of flavor and nutrients.
