"Pullulan" is a water-soluble polysaccharide obtained by cultivating microorganisms in a medium containing malt syrup. It has strong binding properties and excellent film-forming capabilities. It is used not only as an adhesive for food, a binder, and a substrate for edible films, but also for suppressing drip in frozen foods and improving the texture of confections.
